This stew is on the brothier end of the spectrum. I used spicy harissa paste and chopped tomato along with fennel and toasted coriander as the stew’s base, but tomato paste and some chile flakes could also work if they’re easier to find than harissa. I think three types of fish provide enough variety, but you could add or swap in mussels or squid should you like. As you will learn, clams (for me) are not optional.
