There comes a time every winter season when the squash I purchased at the market with good intentions appears to stare back at me challengingly: “When will you finally use me?” So after weeks of staring at it each morning as I reach for my coffee, I finally decide to make this soup. I roast the squash for extra depth of flavor and the harissa paste gives the soup a bit of smoky heat. Coconut milk, ginger, and squash are always a good match so I add some of those in here too.
