Paccheri is one of my favorite pasta shapes, likely due to the fact that its generous tube shape makes it perfect for capturing perfectly constructed bites. Loosely translated from Neapolitan, paccheri means “slap,” referring to the sound it makes when being eaten, which also makes it endearing. I love pairing seafood and pork together, and so I did in this quick-to-come-together dish. It’s finished with breadcrumbs that have been toasted in olive oil for some crunch.
