I call this summer fish because I made it one late June when we were visiting the south shore of Nova Scotia for the very first time. I’ve never fallen for a place so hard, so fast! It’s magical. The house we were staying in didn’t have much kitchen equipment, but luckily I had packed my well-seasoned cast-iron pan, which works well for preparing this dish. Earlier that day in town, we had visited a fish store named Dory Mates Seafood Shop, which had just been opened by a woman named
