This very nice idea - worked out with my Japanese friend, Miho - uses one of the prettiest cultivated mushrooms, the enoki. The recipe is very simple and can be made anywhere because of the general availability of the ingredients.
Trim the base of the tight little mushroom bunches.
Wrap around each bunch a slice of Parma ham (or smoked salmon), and fix with a wooden cocktail stick. Sprinkle the enoki with a little salt and abundant pepper, followed by the olive oil and lime juice, and serve.
