The regions of Umbria and Marche in Italy, as with other regions, have developed their own shape of pasta. Ciriole, or the smaller cirioline, are like tagliatelle with a square profile. A similar pasta from other regions is called ‘spaghetti alia chitarra’, because it is made by hand with a tool consisting of steel strings just like a guitar. This pasta is usually made with eggs and has a delicious flavour.
