Ingredients: 2 large eggs; 200 g wholegrain barley, cooked; 60 ml sparkling water; Pepper; 750 ml cold chicken stock; A small bunch of parsley, separated into stalks and leaves; 1 kg chicken wings or drumsticks or a mixture, plus a leftover chicken carcass if you happen to have one; 2 onions, skin on and quartered; 2 sticks of celery, chopped; 3 leeks (2 roughly chopped, 1 more finely chopped and kept separate); 3 carrots (2 roughly chopped, 1 peeled and more finely chopped and kept separate); 1 tablespoon neutral oil (or liquid chicken fat, should you happen to have some knocking about); 1 tablespoon finely chopped parsley or dill; 100 g matzo meal
