Ingredients: Green salad and basmati rice, to serve; A pinch of saffron; 1 chicken, about 1.5 kg; 1 cinnamon stick; 2 teaspoons Worcestershire sauce; 50 g flaked almonds, toasted; 1 teaspoon salt; 200 ml homemade mayonnaise; 50 g ready-to-eat dried apricots, finely chopped; 200 ml Greek yoghurt; 1 bay leaf; 2 tablespoons good curry powder; 5 black peppercorns; A small bunch of fresh coriander, chopped; A 4 cm piece of fresh ginger; 5 tablespoons good-quality mango chutney (I swear by Geeta’s)
