There are many versions of this hot Piedmontese dip, which is served with raw vegetables. Because of the amount of garlic it is probably better to eat it at the weekend to avoid antisocial effects. It is usually enjoyed with friends, sharing a common terracotta pot which is kept warm over a candle. Special pots for individual portions are also available.
