This very simple dish is a speciality of both Liguria and Sicily. The ingredients need only the minimum of cooking, thanks to their combination of quality and flavour. Baby elvers could be substituted for the anchovies.
Wash the fish and cut out any impurities. Bring a large pan of water to the boil, add the fish and cook for 1½-2 minutes. Drain and dress with the olive oil, lemon juice, salt if desired and lots of freshly ground black pepper. Delicious eaten as an antipasto.
