It is said that this very typical Piedmontese dish should consist of at least 13 different ingredients, but its true afficionados prefer at least 17 or 18 meats of all types, vegetables, even biscuits and fruit.
Leave the lamb cutlets on the bone but beat out the meat until thin. Dust all the meat and vegetables, the apples and amaretti biscuits with flour and then coat them in the beaten egg. Heat a good layer of olive oil in a large frying pan and shallow-fry everything until golden brown, starting with the vegetables, then the apples and biscuits and finally the meat. Serve straight away, with lemon
