Scapece probably comes from the Portuguese word escabeche, which means marinated. This is a delightful little accompaniment for grilled lamb or pork or to eat as part of an antipasto.

Ingredients

  • 800 g ( lb) young courgettes, cut into slices 2 mm (1/12 inch) thick

Method

Fry the courgette slices in abundant hot oil until browned on both sides (not too dark). The courgettes have to swim freely in the oil; if necessary, fry them in batches. Drain through a sieve to get rid of excess oil and then put them in a porcelain dish.
