In this very simple way of eating aubergines the flavour is provided by good olive oil and the aubergines themselves.

Ingredients

  • 2 large aubergines, cut into finger sized strips
  • 125 ml (4 fl oz) olive oil

Method

Leave the aubergines in lightly salted cold water for an hour, then drain and squeeze out the excess water. Heat the oil in a large pan, add the aubergines and fry until brown on each side. Season with salt to taste. They can be served hot or cold.
