Heat the olive oil in a heavy-based pan and, when hot, put in the peppers. Fry the peppers for 5 minutes, stirring from time to time so that they fry on all sides. Their skins will begin to blister, and at that point add the garlic and almost immediately afterwards the chilli and salt to taste. Cook for a further 5 minutes.
