Nowadays you can buy pomodorini preserved in brine from Apulia. The cherry tomatoes taste so sweet and have such an intense colour and flavour that you hardly require any other ingredients.

Ingredients

  • 600 g ( lb) very ripe fresh cherry tomatoes or cherry tomatoes preserved in brine
  • 4 tbsp

Method

If you are using preserved tomatoes, drain off the brine. Squash the cherry tomatoes lightly with the tip of a knife. Heat the oil in a pan, add the garlic and fry gently for a few minutes, then add the tomatoes. Stir-fry for a few minutes, then add the basil and some salt and pepper.

Cook the pasta in boiling salted water until al dente, then drain and mix well with the sauce. S
