This recipe will probably appear in every book I write, because it is my mother’s and has always been traditional in my family. It is very much an Easter cake, made with grains of wheat — symbol of wealth and prosperity - and in large quantities, as the cakes are given as presents to friends. The Neapolitans drink the locally produced wine, Lacrima Christi, to accompany this delicious tart.
