These mushrooms are also called Judas ears, from the Latin Auricola judae. They are remarkable gelatinous fungi, growing mostly on old elder trees. If you cannot find fresh ones, you can rehydrate the dried version. This is available from Chinese food stores and is known as black fungus.
Carefully clean the mushrooms and cut any large ones in half.
Put the butter in a pan with the garlic and chilli. Allow it to melt and then add the mushrooms. Stir-fry for 1 minute, then add the stock and cook gently for 15 minutes or until most of the liquid has evaporated. Stir in the parsley and salt and then serve, either as a starter or to accompany c
