The potato is a tuber in its own right, whereas the truffle is actually a fungus but is also called a tuber — in this case Magnatum pico, the white Alba truffle.
Peel the potatoes and boil them until tender but still quite firm. Slice thinly and place on a serving dish. Drizzle over some olive oil, season with salt and pepper and then shave over the white truffle. Serve immediately, while still hot.
