If you cannot get hold of truffled cheese it is easy to make yourself—provided you have the most important ingredient, the truffle.

Ingredients

  • 200 g (7 oz) ricotta cheese, preferably sheep’s-milk ricotta

Method

Mix all the ingredients together very well, adding just a little salt and pepper, and leave for a couple of hours for the flavours to infuse.
