Cannoli are probably the best-known Sicilian dessert. Nowadays they are eaten all year round, not only after meals but also as a snack. They are special pastries, wrapped around a piece of cane and deep-fried, hence the name cannolo, from canna. The cane is removed after frying and the pastry filled with a mixture of ricotta cheese, sugar, candied fruit and chocolate. This used to be made only at carnevale (carnival time), and especially for the feast day of San Carlo.
