This is probably the most delightful of jams for taste and colour. In the mountainous regions of northern Italy it is still possible to pick your own wild raspberries and they have a remarkably intense flavour, particularly good in this jam. You may also be able to buy them in a market, which will certainly be easier although they will not taste as good.
