This great classic dessert is made with very simple ingredients indeed. However, the figs have to be impeccably ripe and of good quality.

Ingredients

  • 12 ripe but firm, large fresh figs, peeled
  • 300 g (10½ oz)

Method

Preheat the oven to 250°C/475°F/gas 9. Put the figs closely together on a small baking tray and cover them evenly with the sugar. Sprinkle the lemon juice over them and half the lemon zest, cut into thin strips. Finely dice the remaining lemon zest and set aside.
