This wonderfully refreshing summer drink was originally made with barley, but now a thick, sugared almond paste is more likely to be used. It is also called latte di mandorle, or almond milk.
Put the almond paste and water in a liquidizer and blend until it forms a white, milky fluid. If it is too strong, dilute with a little more water.
