Chop potatoes coarsely (peeled or not, as you like). Use a small handful of peanuts per 3 to 4 cups worth of chopped potato; rinse them in hot water. Combine chopped sweet potatoes, peanuts, a thick slice of peeled, crushed ginger, and a pinch of salt in a large pot with 3 to 4 times as much water. Bring to the boil and simmer gently until tubers are quite soft and broth is well flavored.
