  • 12 oz (350 g) fresh spinach or Chinese peashoots (dou miao), washed and stems removed

Method

  1. Wash and rinse the spinach well, then place in a colander to drain.
  2. Heat the oil in a wok over high heat and add the salt.
  3. Add the sliced garlic and the spinach, and turn carefully with a spatula to coat all the leaves with oil. Stir-fry for about 1 minute, or until all the leaves are wilted and have turned dark green. Transfer immediately to a servin
