  • lb. potatoes
  • 1 lb. chopped onions
  • 1 lb.

Method

Peel the potatoes thinly and cut into uniform size. Heat the oil and fry the onions until golden brown. Add the tomatoes and simmer until soft with the sugar and bayleaf. Finally add the potatoes, seasoning and enough water to half cover them. Cook until the potatoes are soft and the sauce is thick. This usually is served as a main meal.
