Peel the potatoes thinly and boil in salted water until tender. Meanwhile, make the sauce—cut the bacon into small pieces and sauté in the butter with the onion. Add the flour and cook for a few seconds without browning. Stir in the tomatoes and season to taste. Allow to cook gently for about 5 minutes and then keep hot.
