Rub 4 oz. butter into 5 oz. sieved S.R. flour until mixture resembles fine breadcrumbs. Add ¼ teaspoonful salt and 3 oz. mashed potato, using a fork to blend them into the mixture. Leave to stand in refrigerator for an hour until absolutely cold.
