Sieve potatoes into a basin, add sugar, peel, butter and a little flavouring, such as vanilla if wished. Separate eggs. Mix in the beaten yolks and then the whisked whites. Add a little milk if the potatoes appear dry. Put the mixture into a greased lined 8 in. sandwich tin, smooth it on top and bake until browned. Sprinkle with sugar.
Serve hot or cold at teatime.
