  • 3 lb. joint beefChuck Steak, Silverside or Brisket
  • 4 carrots, peeled and thickly sliced

Method

Half fill a large saucepan with water, add salt (2 teaspoons to 2 pints water) and bring to the boil. Tie beef neatly, place in the water, cover and simmer gently for 30 minutes. Add the carrots, leeks, turnips, corn, pepper, onion and tomato and continue simmering for 1 hour. Add potatoes and cook gently for a further 20 to 30 minutes when beef will be tender.
