Cut meat into 1 in. cubes and toss in seasoned flour. Melt fat in a pan and fry meat and onions until lightly browned. Add tomato purée and mustard and blend in beer. Add bayleaf and parsley. Season. Bring to the boil, then simmer for 2½ hours. Alternatively, transfer to a casserole and simmer at 325°F., or Gas Mark 3, for 2½ hours.
