  • 2 breasts of lamb, boned
  • 2 oz. butter
  • 1 large onion, finely chopped

Method

Trim excess fat from meat. Cook onion gently in butter until transparent. Chop herbs. Soak the bread in egg and milk and mash well. Mix onions, herbs and bread and season with salt, pepper and ½ teaspoon sugar. Divide mixture between the two breasts, spread it out evenly, roll each of them up and tie with string.
