  • 1 ham or 3½-4 lb. piece of gammon
  • 1 lb.

Method

Boil water in saucepan. Put flour through sieve and make a hole in the centre. When water is boiling add lard and when this has melted pour it quickly into the flour. Beat well with a wooden spoon. Knead mixture until smooth. Leave to stand for 15 minutes.
