Cut roots and tough stems from spinach. Wash thoroughly in cold water. Drain, shake out all moisture and tear into small pieces. Chop spring onions very finely and mix with spinach. Mash garlic and cover with salad oil. Leave to stand for 30 minutes. Discard garlic and trickle over the spinach and let stand. Sauté bacon until crisp. Cut into strips and drain on absorbent paper. Keep bacon fat.
