  • Piece of bacon for boiling. Middle gammon or corner gammon are suitable for this recipe.
  • 1 bayleaf
  • Pepper

Method

Leave bacon to soak in cold water for 4 hours (or overnight). If packeted then follow instructions on label. Drain. Put into pan and cover with fresh water. Add the bayleaf, pepper and onion. Bring to the boil then simmer for 20 minutes per pound or until tender. Drain and remove rind while joint is hot. Turn on oven; set at moderate 275°F. (Gas Mark 5). Put bacon in a meat-tin.
