Wash peas and soak overnight in cold water. Tie loosely in a cloth and place in a saucepan with a pinch of salt and cover with boiling water. Boil for 2½-3 hours until soft. Sieve the peas or liquidize in a blender and add the butter, egg, pepper, salt and sugar. Beat together till lightly mixed then tie up tightly in a floured cloth and boil for another 30 minutes.
