Ingredients

  • 1 knuckle smoked bacon
  • 1 pig trotter
  • 1 bouquet garni

Method

Put the knuckle, trotter and all the seasonings into a pan with the water. Bring to the boil and simmer for 1¼ hours. Strain and add the diced vegetables. Cook until tender. Add the sherry and the bacon cut from the bone. Re-season and chill thoroughly. Serve in soup cups with a slice of cucumber on top.
