  • 3-4 lb. joint forehock, boned and rolled
  • Toasted breadcrumbs
  • 1 small white cabbage, shredded finely

Method

Soak joint overnight in cold water. Place in a saucepan, cover with cold water and simmer allowing 25 minutes per pound and 25 minutes over. Remove from liquor, skin and leave till cold. Mix cabbage, onion, carrots, sultanas and pineapple in a bowl. Combine mayonnaise with lemon juice and seasonings. Toss salad in mayonnaise until well coated. Slice joint and arrange on a platter with the coles
