  • 4 lb. piece of collar bacon, rolled and tied
  • 1 pint ginger beer

Method

Soak the joint for 6 hours, if smoked, and 2 hours if unsmoked. Put into saucepan which is just big enough and add the ginger beer to cover. Bring to the boil. Reduce heat and simmer for 20 minutes further, turning occasionally in the liquid. Remove from the pan and strip skin off. Place in roasting-tin and coat the fat with the ginger marmalade.
