  • ½ lb. cooked gammon, diced
  • 3 oz. butter
  • 1 large

Method

Melt 2 oz. butter in a pan and add onion and garlic. Sauté till onion is soft but not coloured. Add rice and continue to stir for 4-5 minutes until opaque. Take saucepan off heat and add stock, nutmeg and seasonings. Bring slowly to the boil, stirring all the time. Cover and allow to simmer very gently for about 20 minutes or until all the liquid has been absorbed. Add vegetables and bacon and
