  • 1 oz. lard
  • 6 oz. chopped onion
  • 1 crushed clove

Method

Melt the lard in a flameproof casserole dish. Fry the onions and garlic for a few minutes. Cut the bacon into 1-in. squares and toss in the seasoned flour. Add this to the onions and cook for 5 minutes. Add the ale, bouquet garni, tabasco sauce, lemon peel and mushrooms. Bring to the boil. Put lid on and reduce heat. Simmer for 1¼ hours. Re-season and serve with mashed potatoes and buttered car
