  • 2 joints of 6 pork cutlets
  • Salt and pepper

Method

Ask the butcher to partially chop the cutlets. Form them into a circle and sew the two joints together. Season with salt and pepper. Roast the meat (45 minutes per pound) and baste frequently with the juice of the meat. To make orange rice, melt butter in a saucepan, add celery and onion, then add rice and salt.
