  • 8 oz. pork belly
  • 8 oz. onion, chopped
  • 6 chicken

Method

Cut the pork into cubes, add chopped onion and cook in its own fat for 15 minutes, until half cooked. Add chicken joints and mushrooms. Flavour with garlic salt, parsley and thyme, add red wine. Simmer slowly until cooked. Put rice, water and salt into saucepan. Bring to the boil, stir once. Cover tightly and simmer for 15 minutes. Before serving, mix the cornflour with a little water and stir
