Cream is much too rarely used in cooking—one-third of the British, so the Board of Trade informs me—never buy or use cream in any form, not even in their coffee.
This is not so in other parts of the world, especially in those countries where cream is cheaper and the economy more rural. It’s a great treat to land in, say Switzerland, and find cream added to the cookery as a matter of course, rather than as a once-a-year treat.
