Melt butter in a large frying-pan. Add breadcrumbs and fry gently until golden brown and crisp. Allow to cool and stir in sugar. Reserve a few mandarin oranges for decoration. Blend cornflour with mandarin juice and heat until thickened. Add a few drops of orange colouring. Mix with remaining mandarin oranges and allow to cool. Spoon half the mandarin orange mixture into base of a glass serving
