Whisk the syrup, milk and ice-cream together until well blended and frothy. Pour into a tall glass and sprinkle a little ground cinnamon on top. Serve with a straw.
Blend the cinnamon with the sugar then add the water, cloves and lemon juice. Bring slowly to the boil, stirring all the time. Simmer gently for 5 minutes. Strain and leave to cool. Store in an airtight jar and use as requir
