  • pint yogurt
  • 6 oz. long-grain rice
  • ¾ pint <

Method

Put rice, water and salt into saucepan. Bring to boil, stir once. Cover tightly and simmer for 15 minutes. Cook onion and garlic in butter until tender. Add rice, seasonings, tomatoes, coconut and half of the nuts. Blend well. Fold in the yogurt. Heat through. Top with remaining nuts. Serve with chicken.
