  • ¼ lb. Double Gloucester cheese (grated)
  • 2 oz. butter
  • Pepper

Method

Pound the cheese with butter, pepper and mace. Add the sherry and mix thoroughly. Use this as a spread for water biscuits, cream crackers, cheese biscuits or small snippets of bread. Then garnish attractively with sliced olives, sprigs of parsley or a few chopped nuts.
