  • 2 oz. butter
  • 4 oz. Leicester cheese (grated)
  • Salt and pepper

Method

Cream butter, add cheese, salt, pepper and mustard and mix thoroughly. Spread on the toast and cut into interesting shapes with a sharp knife or cutter. Garnish attractively with capers, tiny slices of cucumber, and pieces of tomato or radishes. The radishes should be cut crosswise several times (without severing the base) and allowed to open flower fashion in cold water.
