Sift flour, sugar and salt into a bowl. Add grated or very finely chopped walnuts. Rub in butter until it resembles fine breadcrumbs. Gradually add egg-yolks and water and bind together into a stiff dough. Knead very lightly. Leave to rest in a cool place for 10 minutes. Roll out pastry into a circle 9 in. in diameter.
